Project: Healthy & affordable food – from food waste

Screen Shot 2016-01-22 at 23.51.29Coby is based in Amsterdam and co-founder of the initiative ´Healthy & Affordable´, one of many food initiatives in Europe that focusses on collecting food that restaurants and shops are about to throw away, preserving the still edible food and creating new healthy and affordable food products and dishes that are shared with the community of volunteers, sold at events and used for catering purposes.

The team of volunteers aims to produce whole, locally sourced organic and seasonal fresh food that is based on plants and natural (no additives including sugar), nutritionally balanced and packaged with ecological material. A big part of the work however, is to raise awareness of the food waste issue, since many people are still not informed about the issue. Almost one third of our food is wasted in Europe and this food waste creates a major contribution to our CO2 emissions.

I need to find non-toxic and healthy ways to preserve the food we gather every day. I am also missing solutions that help me measure the nutritional value of the food so I can create healthy compositions for my customers.
